Cooking the mussel fritter mix is pretty straight forward! Just treat it as you would any other fritter batter.

Defrost the pottle in the fridge overnight, it's the safest way to ensure that it does not get warm and become unsafe to eat.

Stir well before using to ensure even consistency.

Heat a generous splash of canola or rice bran oil in a frying pan over medium heat. You want to use an oil that isn't too strong tasting and will amend the taste of the fritter.

Spoon dollops of the mix into the pan, flatten slightly into fritter shapes. The fritter mix should 8 lid sized fritters of 4 good sized ones. The bigger they are, the longer they will take to cook.

Shallow fry for 3–4 minutes each side, or until golden brown and cooked through.

Check doneness by gently pressing the centre of a fritter – it should feel firm (don't burn yourself!)

Serve hot with your favourite dipping sauce or a squeeze of lemon, and a slice of bread - yum!!!
