This is our favourite tried and true mussel fritter recipe - our family loves it! The key to it is using freshly shucked mussel meat and reserving the juice. Don't be tempted to use steamed meat, it's not quite the same!
Ingredients:
- 1 kg fresh mussels, shucked. Reserve juice.
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp curry powder
- 1/4 cup fresh corriander, chopped
- 1 small onion, finely chopped
- 1 egg
- 1/2 cup beer (or water)
- Salt and pepper to taste
- Oil for frying
Instructions:
- In a bowl, mix flour, baking powder, curry powder, salt, and pepper.
- Stir in chopped mussels along with liquid, onion, and corriander.
- Whisk egg and beer together, then add to the mixture, stirring until combined.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of batter into the pan and fry until golden brown, about 2-3 minutes per side.
- Remove and drain on paper towels.
- Serve hot with lemon wedges or dipping sauce of choice on white sliced bread.
