Mussels in a creamy bacon sauce

This sauce is dish worth in itself so make sure you serve with plenty of crusty bread. It's one of our abosolute favourite ways to eat mussels so please stop steaming your mussels and give this way ago!

Ingredients:

  • 2 kg fresh mussels, cleaned
  • 3 tbsp butter
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1/4 cup white wine
  • ½ cup of bacon pieces
  • 100mls of cooking cream
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Crusty bread, for serving
  • Lemon Slices

 

Instructions:

  • In a large pot, melt butter over medium heat. Add garlic & onion and sauté for 3-4 minutes until fragrant.
  • Pour in white wine, bringing it to a simmer.
  • Add mussels, cover with a lid, and steam for 5-7 minutes, shaking the pot occasionally, until mussels open. Discard any that remain closed.
  • Cook bacon pieces till crispy.
  • To make the sauce, strain the mussel/onion juices. Return pot to stove, add strained mussel juice, cooked bacon pieces and the cooking cream. Cook for 1-2 minutes till sauce thickens a bit.
  • Pour sauce over the mussels,

and top with parsley.

 

Serve hot with crusty bread to soak up the sauce and lemon slices.
